Olive Oil Flour Tortillas

If you were lucky enough to grab flour from the grocery store but you don’t have any yeast, you can still make something by hand that gives you that hot, fresh baked feeling. Also, you can make tacos with these. Can you do with that bread? I don’t think so.

Flour tortillas are typically made with lard, but I didn’t have any of that. I do have a giant bottle of olive oil from Costco though.

Ingredients

Makes 10-14 tortillas

3 cups all-purpose flour
1 cup warm water
4 tbsp. extra virgin olive oil
1 1/2 tsp. baking powder
1 tsp. kosher salt

1. In a large mixing bowl, combine the dry ingredients and mix together.

2. Add the olive oil and warm water to the dry ingredients and combine using a spatula.

3. Put the mixture onto a flour-dusted work surface and knead into a smooth, cohesive ball of dough. Add more flour or water as needed as you work.

4. Place the ball of a dough in a mixing bowl and cover with a kitchen towel. Let the dough rest for 60 minutes.

5. Divide the dough into equal portions and roll into small balls using your hands. You can flour your hands to help with any stickiness. You can store these balls for up to a week in an air tight container in the fridge if you aren’t ready for delicious tortillas yet.

6. On a flour-dusted work surface, roll out the dough balls using a rolling pin or wine bottle or tall glass prayer candle. If your dough ball is getting stuck when rolling, just dust your rolling device with some flour.

7. Heat a cast iron skillet (or whatever you have) over a medium high flame. Add your rolled out tortilla and cook for 30 seconds to 1 1/2 minutes per side. The timing depends on your stove, but what you are looking for are a few bubbles and a handful of light brown spots. If you aren’t averse to char, feel free to take the tortilla even further and get black spots.

Skip to the 2:00 minute mark and you can see a tortilla puff up like a soufflé. If that happens to you, that’s pretty cool. Instagram that shit.

8. Eat immediately or keep warm in a bowl covered with a kitchen towel while you make additional tortillas. If you want to be the life of the party, buy a colorful handwoven straw basket for your tortillas.
